We offer a knife sharpening and repair service on-site in Montreal, at 412 Gilford Street H2J 1N2, and now also at our new store in Quebec City, located at 625 Saint-Jean Street G1R 1P7. We sharpen on water stones using traditional Japanese techniques. Our expertise is not limited to Japanese knives; we accept all blades! For more details, visit our sharpening service page. Whether you are within 30 minutes of Laval, the South Shore, or near our location in Quebec City, you can come directly to the store. If you prefer, you can also select the postal option on our website to send us your knives. We will return them perfectly sharpened.

The StaySharp story

StaySharp was created by Olivier Caza Berthelet, a professional chef who had a fascination for the world of Japanese kitchen knives. He started sharpening his colleagues' knives while still working full time in the Montreal kitchens. He soon realized that there was a crying need for affordable Japanese knives in the restaurant industry. This gave him an idea: Japanese blades at the right price! What makes a Japanese knife different?

The main differences between a Japanese knife and a European style knife are the hardness of the steel and the fineness of the edge. The higher hardness of the steel provides better edge retention, while a finer edge increases the cutting ability of a blade as it will go through food better.

The hardness of the steel is due to the high carbon content found in the best steels; Japanese steels contain a minimum of 0.9% and up to 1.3% carbon. The sharpness of Japanese blades is due to the fact that they are hand-molded by skilled sharpeners who have many years of experience. These sharpeners will be able to adapt to each type of blade and type of steel they work with, and judge the best way to finish the knives to get the most out of each of them. A difficult task for a machine that makes hundreds of blades a day.
