Product Type: Dashi Shoyu Sauce Quantity: 300ml Suehiro Umami is a dashi-shoyu-style sauce: a blend of soy sauce and mirin, infused with kombu seaweed and dried bonito. The result? A sauce with distinct flavors, both salty and smoky. With its complex seasoning, Umami sauce will enhance stir-fries, meats, marinades, fried rice, and soups. Suehiro Shoyu's brewery is located in southwest Japan, near the Ibogawa River, in the heart of Tatsuno City in Hyogo Prefecture. Founded in 1879, the brewery still maintains its artisanal brewing methods today. But this traditional craftsmanship is not without challenges in the face of food industrialization—of the sixty soybean breweries once located in Tatsuno City, only a handful remain. The secret to this unique flavor comes from Suehiro's wooden warehouse, where the specific fermentation bacteria naturally reside.
Maintenance tips

To ensure the longevity of your cutting board, we recommend regular maintenance with food-grade mineral oil and beeswax .

  • Beeswax : As a preventative measure, apply a thin layer to the surface of the board. Let it soak in for a few hours, then remove the excess with a paper towel. Make sure to use a food-safe beeswax.
  • Mineral Oil : As soon as the board shows signs of dryness, generously apply neutral mineral oil. Allow to absorb and reapply if necessary until completely absorbed. Then wipe off any excess. The oil must be food-grade.
  • Occasional sanding : Once or twice a year, hand sand with 400-600 grit sandpaper to smooth the surface and close the pores of the wood. Then apply a new coat of beeswax to protect the board.
