Yamanaka Shikki was founded near the Yamanaka hot springs area of Ishikawa, famous for lacquerware making.
Typically, the wood used for Japanese wooden table wear is cut horizontally to the ground for efficiency, but Yamanaka Shikki cuts his wood vertically to the ground. This way, the wood pattern is more unique to each piece and appears more clearly. Cutting the wood in this manner also helps strengthen the wood against warping or cracking.
Additionally, by repeatedly applying a transparent lacquer called "Kiurushi" in several different layers along the wood grain and wiping it off with each layer, the wood pattern can be clearly seen even when the lacquer is fully applied and dry. When Urushi lacquer is used, Urushi strengthens the wood and acts as an insulator for hot food while protecting the wood from food. This lacquered wood (Urushi) helps keep the product in remarkable condition for many years.
Shirasagimokko has been using locally sourced natural wood for three generations. All the wood used in their products is intended to convey the unique character of nature. Shirasagimokko values this natural wood and creates beautiful wooden products, and a portion of their sales is donated to sustainable reforestation in Japan.

Maintenance tips
To ensure the longevity of your cutting board, we recommend regular maintenance with food-grade mineral oil and beeswax .
- Beeswax : As a preventative measure, apply a thin layer to the surface of the board. Let it soak in for a few hours, then remove the excess with a paper towel. Make sure to use a food-safe beeswax.
- Mineral Oil : As soon as the board shows signs of dryness, generously apply neutral mineral oil. Allow to absorb and reapply if necessary until completely absorbed. Then wipe off any excess. The oil must be food-grade.
- Occasional sanding : Once or twice a year, hand sand with 400-600 grit sandpaper to smooth the surface and close the pores of the wood. Then apply a new coat of beeswax to protect the board.
