Mr. Kotsuji has been training as a Shigarakiyaki ceramicist for over 10 years.
After founding his company, Mr. Kotsuji moved to Shiga and Kyoto to find the best ceramics in which to express himself.
Now working in Igayaki, using the local rough sandy clay from Iga in Mie Prefecture, he is able to take advantage of the clay's high iron content to produce black spots on the surface of the ceramic.
Mr. Kotsuji's ceramics are both robust and refined, reflecting the Japanese countryside. Another of his unique ceramics are the turquoise blue cups that use Iga fire-resistant clay, which allows the cups to be fired twice, thus producing beautiful textures and colors.
-Recommend hand washing. Never put in the dishwasher.
-Please dry them thoroughly to protect them from mold.
-Not recommended for use in a microwave.
-Do not use in the oven.
Maintenance tips
To ensure the longevity of your cutting board, we recommend regular maintenance with food-grade mineral oil and beeswax .
- Beeswax : As a preventative measure, apply a thin layer to the surface of the board. Let it soak in for a few hours, then remove the excess with a paper towel. Make sure to use a food-safe beeswax.
- Mineral Oil : As soon as the board shows signs of dryness, generously apply neutral mineral oil. Allow to absorb and reapply if necessary until completely absorbed. Then wipe off any excess. The oil must be food-grade.
- Occasional sanding : Once or twice a year, hand sand with 400-600 grit sandpaper to smooth the surface and close the pores of the wood. Then apply a new coat of beeswax to protect the board.
