Kiridashi Shichirin is made by manually cutting clay into blocks at the end of a tunnel dug over many years, so as not to crush the air pocket contained in the natural diatomaceous earth. It is usually kneaded to break up the clay mass, which can crush the air vessel. Kiridashi Shichirin is cut into blocks and formed into the shape of Shichirin as is, so the vacuoles do not collapse, and it is characterized by higher heat retention and lightness. In addition, the cutting work requires many years of skill and physical strength, and due to the aging of the craftsmen, there are currently only two companies in the world capable of making cut shichirin.

The Happy Shichirin is an exceptional japanese charcoal grill for those who seek a genuine tabletop cooking experience — its round 30.5cm form makes it a naturally portable japanese grill suited to both intimate indoor gatherings and outdoor use. As a shichirin charcoal grill, it pairs directly with the included Kishu-Binchotan to deliver the steady, radiant heat essential for authentic yakitori, allowing you to grill at the table with the precision and ceremony the tradition deserves.

Frequently Asked Questions

Round or rectangular shichirin: which should you choose?

The choice depends mainly on what you cook. A round shichirin like this model concentrates the heat in the center and invites everyone to place their pieces around the fire, which is ideal for shared meals, slices of meat, and vegetables. A rectangular model is better suited to linear cooking, such as yakitori skewers lined up side by side. If you often entertain and enjoy cooking at the table, the round shape encourages interaction around the fire.

How to create hot zones in a round shichirin?

Distribute the binchotan unevenly. Cluster most of the coals in the center to create a very hot zone, ideal for searing, and leave the sparser outer area for gentle heat. This allows you to sear a piece in the center, then move it toward the edge to finish cooking without burning it. The included fan is used to reignite a specific area as needed. With a little practice, these two heat levels are sufficient for most grilled foods.
