Shirogami #1 (White Steel #1) is a very high-purity carbon steel with no significant alloying elements, which allows it to be sharpened to an exceptionally acute edge. Hardness reaches 63 to 65 HRC, supporting good edge retention between sharpenings. The trade-off is that the steel requires more passes on the stone to restore a keen edge after extended use, and reacts quickly to moisture and acidic ingredients. A patina develops with use, which is expected and provides some surface protection.
Care
Wipe the blade dry immediately after each use. Never leave the steel in contact with moisture or acidic foods. A light coat of camellia oil on the blade protects it during storage. Not dishwasher safe.
