This 210 mm gyuto in Shirogami #1 (White Steel #1) brings together two properties that are rarely combined at this format: the purity of an unalloyed carbon steel and the versatility of a double-bevel Japanese chef's knife. The curved profile suits both push-cut and rocking techniques across vegetables, meat, and fish. At 210 mm, the blade stays agile without sacrificing cutting surface.
The tsuchime (hammered) finish covers the blade's flank with irregular hammer marks that reduce food adhesion by creating micro air pockets between the blade and the ingredient. The Pakka handle, a dense and dimensionally stable composite material, resists moisture and temperature changes without warping.
Shirogami #1 (White Steel #1) is an exceptionally pure carbon steel: no chromium, no tungsten, only 1.25,1.35% carbon with trace amounts of manganese and silicon. This composition allows the blade to take a very fine edge, though it requires more passes on the stone than Shirogami #2. Hardness reaches 63,65 HRC. The steel is reactive to moisture and acids: a patina develops quickly with use, which is normal and protective. Wipe the blade immediately after contact with acidic or wet ingredients.
Care
Wipe and dry the blade after each use. Apply a thin coat of camellia oil for extended storage. Never wash in the dishwasher.
