At 270 mm, this gyuto ('beef sword' in Japanese) is a long-format knife suited to large cuts of meat, fish and vegetables in quantity. Its curved profile allows both rocking cuts and push cuts, lifting the blade between each stroke. The double bevel suits right-handed and left-handed users alike. Keeping the blade straight at the board protects the edge.
The handle is finished in urushi, the traditional Japanese lacquer made from the sap of the lacquer tree. It is a surface finish distinct from a simple varnish. On a 270 mm gyuto, this handle sits behind a long blade intended mainly for high-volume cutting and large pieces. Urushi deserves the same care as the blade: wipe it after use, avoid prolonged soaking and never use the dishwasher.
Shirogami #2 (White Steel #2) is a Hitachi (Proterial) steel with no chromium or tungsten, hardened to 60 to 63 HRC. It is not stainless: it reacts to moisture and quickly develops a patina that naturally protects the blade. It is less brittle than Shirogami #1. On the stone, it responds quickly and can be brought to a very fine edge. Resistance on entering food depends as much on the blade geometry as on the steel.
Care
Wipe the blade immediately after use, and while cutting acidic foods. A grey patina is normal. Apply a little camellia oil for extended storage and never wash in the dishwasher.
