This gyuto 240 mm with a nashiji finish is forged in Aogami #2 (Blue Steel #2) in the tradition of Sanjo, Niigata. At 240 mm, the curved profile suits both push-cut and rocking techniques across vegetables, meat, and fish. The blade height keeps fingers clear of the board throughout the stroke.
The nashiji finish gives the blade body a lightly granular texture reminiscent of Asian pear skin, contrasting with the polished edge. The wa handle in octagonal walnut adds a fine-grained, warm-toned grip with a stable cross-section. The sanmai construction directs the Aogami #2 toward the edge while the stainless cladding shields the blade body from the reactivity of the carbon core.
Aogami #2 (Blue Steel #2) is produced by Hitachi Metals from Shirogami #2, with chromium (0.2,0.5%) and tungsten (1,1.5%) added for stronger edge retention between sharpenings. It takes a very acute edge on water stones and responds readily to sharpening. For those who value patina development, Shirogami remains the more reactive option. The carbon core is reactive: wiping the blade after each use is essential.
Care
