This 210 mm gyuto in SLD combines two finishes on a single blade: a nashiji body with a lightly granular, matte texture, and a migaki-polished bevel toward the edge. The 210 mm format suits kitchens where board space is limited, while the curved profile still supports both push-cut and rocking techniques across vegetables, meat, and fish.
The wa-handle in chestnut brings a warm tone and an open, distinctive grain. Chestnut is a dense wood with good moisture resistance, and it appears infrequently on Japanese production knives. The contrast between the nashiji body and the migaki bevel is visually clear: the granular texture of the body stops where the polished edge zone begins, making the transition between the two surfaces immediately readable.
SLD is a tool steel in the semi-stainless category, developed by Hitachi Metals. Its chromium content (11,13%) provides better corrosion resistance than pure carbon steels, without reaching the level of a standard stainless. It develops little to no patina under normal use. At the stone, it behaves similarly to a carbon steel: it responds well to sharpening and reaches a fine edge in a reasonable number of passes. Quality whetstones are sufficient; no specialized stones are required. Its high hardness (61,64 HRC) allows the edge to hold well between sharpenings.
