The Hitohira Natsuya is a Japanese natural stone primarily intended for intermediate sharpening stages and bevel work. Since each stone is carved from natural material, its color, texture, shape, and behavior may vary slightly from one piece to another.
This stone has a creamy beige hue with small natural inclusions visible on the surface. The inscriptions 夏屋砥 identify the stone as a Natsuya. The sides retain a rougher appearance, revealing the stone’s natural structure.
When used, the Natsuya offers a more organic approach than a synthetic stone. The feel under the blade, the rate of abrasion, and the resulting finish vary depending on the steel, the pressure applied, and the abrasive slurry that forms during use. It is particularly useful for refining a cutting edge or working on the surfaces of a Japanese knife before moving on, if necessary, to a finer finishing stone.
As with most Japanese natural stones, it is best to simply wet the surface before and during use rather than letting the stone soak. After sharpening, it should be rinsed and then left to air dry completely, away from direct heat sources. Occasional dressing will also help maintain a flat, even surface.
