Shirogami #2 translates to: Shiro (white) and Gami (Steel) and thus; white steel #2. It is named after the color of the package it was wrapped in at Hitachi Metals. The composition of this steel is very pure and contains almost only iron and carbon (1.05%–1.2%). It is in the hands of very experienced blacksmiths that one realizes the enormous potential of Shirogami #2. The quality of the heat treatment and a lower temperature forging are key elements that can allow Shirogami #2 to compete with and even surpass many modern steels. Try a Shiro #2 blade forged by Tanaka-san, Kisuke Manaka-san or Yoshikane Forge and you will see!

This Hitohira Kikuchiyo Ren White #2 Santoku 180mm is ideal for those seeking a precise and robust Japanese blade for everyday prep. With its fine grain structure and ease of sharpening, it delivers a satisfying edge retention and traditional craftsmanship.

The Hitohira brand is a guarantee of excellence and assures you that every knife sold under this name meets rigorous quality standards.

A White #2 Santoku knife 180mm occupies a distinct space in the Japanese knife world: its wide, flat blade and compact length make it particularly agile for the push-cutting and chopping strokes that define everyday kitchen prep. Where longer, thinner-spined profiles call for a pulling motion, the Kikuchiyo Santoku knife rewards a more direct, vertical technique — making it an intuitive choice for cooks who want precision without complexity.

GENERAL PRESENTATION OF SANTOKU

The Santoku knife, or Santoku bōchō, is a versatile Japanese Santoku knife of Japanese origin. Its name literally means "three virtues" or "three uses" in Japanese. Typically measuring between 15 and 18 cm (6 and 7 inches) long, its blade has a flat edge and a curved kamagata tip at an angle of approximately 60 degrees. The term "Santoku" refers to the wide variety of ingredients this Santoku knife can cut, such as meat, fish, and vegetables, as well as the tasks it can perform, such as slicing, chopping, and mincing. Frequently Asked Questions

Why is Shirogami #2 called white steel?

The name comes from the color of the wrapping paper historically used by the manufacturer of this steel: Shiro means white in Japanese. It therefore indicates neither the color of the blade nor a level of quality. Blue steel, or Aogami, is not superior to white steel: it is another family of steel, with different properties. Shirogami #2 is distinguished above all by a very simple composition, made essentially of iron and carbon, which only experienced blacksmiths know how to fully exploit.

How do I care for a Ho wooden handle?

Ho wood is a natural wood that does not like standing water or direct heat. Rinse the blade under the tap while keeping the handle away from the stream, then wipe everything with a dry cloth. Avoid the dishwasher, as it dries out the wood and can cause it to crack. If the handle becomes dull or rough, rub it with a few drops of neutral vegetable oil, let it soak in, then wipe off the excess before storing the knife.

How to sharpen a white steel Santoku?

The Shirogami #2 responds quickly on water stones: a few consistent passes are often enough to reform a clean edge. Work first on a medium grit until a slight burr forms along the entire length, then finish on a fine grit to refine the sharpness. On a 180 mm Santoku, the rounded tip requires lifting the handle slightly to maintain a consistent angle. Rinse, then dry the blade immediately, as this carbon steel oxidizes quickly.

Is a carbon steel Santoku suitable for daily use?

Yes, provided you incorporate drying into your routine. Carbon steel offers an extremely fine edge and is easy to re-sharpen, two advantages for a knife used at every meal. In return, it rusts if left damp and develops a patina over time. Keep a dry cloth near the cutting board and wipe the blade after each change of ingredient, even for a quick cut. With these habits, this Japanese Santoku knife becomes a reliable everyday companion.
