The Hitohira Imojiya TH is a Japanese bunka knife made in Seki, Gifu Prefecture. This series features a blade approximately 180 mm long with a versatile profile and a K-tip designed for precise cuts. The blade has a understated satin finish and is mounted on an octagonal Japanese ebony handle, suitable for both right- and left-handed use.
Its sanmai construction combines a V-Toku 2 carbon steel core with soft stainless steel sides. The cutting edge measures 181 mm, with a total length of 190 mm from the handle to the tip. The blade is approximately 47 mm high and 1.7 mm thick, while the knife weighs approximately 145 g. These proportions result in a relatively lightweight knife despite its size.
When cutting, the thin blade provides a direct and precise feel. The fairly flat profile is well-suited for deep, vertical cuts through vegetables, while the angled tip facilitates detailed work on meats, fish, and small ingredients. This bunka knife can serve as a primary knife for daily preparation, but its fine edge is not suitable for bones, frozen foods, or twisting motions.
Although the sides are stainless steel, the V-Toku 2 core remains exposed along the cutting edge and may develop a patina. We recommend wiping the blade clean during use, washing it by hand, and drying it immediately. Avoid the dishwasher and store the knife in a dry place.
