This 180 mm santoku in SG2 (R2) combines the versatility of a compact format with the edge retention of a semi-stainless powder steel. Its tall profile provides generous knuckle clearance and a large working surface, while the rounded tip naturally favors push-cut work across vegetables, meat and fish.
The blade features a damascus construction across most of its surface, with a tightly patterned textured body and a mirror-polished bevel along the cutting edge. This contrast between the worked zone and the bare edge is common on damascus constructions built around a powder steel core. Kanji are engraved on the blade.
SG2 (R2), produced by Takefu Special Steel through a powder metallurgy process, features fine and uniformly distributed carbides throughout the steel matrix. At 62–65 HRC, it holds its edge significantly longer than conventionally forged steels in the same category. The trade-off: its high vanadium carbide content requires more passes on the stone to restore a keen edge — quality whetstones are recommended. Despite its high chromium content, the very high carbon level makes it slightly more prone to rust than VG10: rinsing and drying after each use is advised.
Care
Rinse and dry after use. Never put in the dishwasher. Sharpening on water stones is recommended to maintain the edge.
