The santoku, whose name translates as 'three virtues' (vegetables, meat, fish), is a versatile knife with a tall profile and rounded tip. Its compact format suits a direct push-cut motion on the board, with good knuckle clearance along the full length of the blade. It works equally well as a primary knife or a reliable second knife for everyday tasks.
This santoku is forged in Ginsan (Silver Steel), a high-carbon stainless steel with 0.95,1.10% carbon and 13.0,14.5% chromium. Ginsan holds a distinct position among stainless steels: it responds to the whetstone much like a carbon steel, reaching a very fine edge without the maintenance demands that come with it. No patina forms. The edge holds well between sharpenings, and a few passes on a water stone are enough to bring it back.
Care
Rinse and dry after each use. Never put in the dishwasher.
