The generous blade height provides comfortable knuckle clearance when working through julienne cuts, brunoise, or dense root vegetables. This format is purpose-built for vegetables and is not best suited for bone-in meat or whole fish.
Ginsan (Silver Steel) is a stainless steel with high chromium content (13.0,14.5%) and a hardness range of 59,62 HRC depending on heat treatment. It sharpens quickly on whetstones and reaches a very fine edge for a stainless steel. Its sharpening behavior is close to that of carbon steels: it responds well to the stone in relatively few passes. No patina forms. Daily upkeep is limited to rinsing and drying after use.
