Shiraki Knives in Sakai City was one of the best blacksmiths in Japan. Kenichi Shiraki was a famous blacksmith who could make No. 1 water-tempered Honyaki knives (Shiroichi Mizu Honyaki) from white steel. It is said that there are only about four blacksmiths who can make these knives as of 2021. This skill is required.

Satoshi Nakagawa studied and crafted knives there for 16 years. He closed Shiraki Knives after Master Shiraki's retirement and started Nakagawa Knives in April 2021. He also makes Shiroichi Mizu Honyaki knives, single and double bevel knives, and stainless and carbon steel knives. This fact makes him one of the best blacksmiths in Japan. He has inherited Sakai's 600-year history and tradition of cutlery making.

This nakiri knife, forged in Nakagawa's 180mm polished Ginsan steel, carries the mirror finish that defines the Migaki tradition — a surface achieved through meticulous hand-polishing that enhances both food release and corrosion resistance. For cooks who appreciate a vegetable knife that performs as precisely as it looks, the combination of Sakai craftsmanship and stainless steel makes this an exceptional choice.

Product Remarks

Please note that each handle is unique and may exhibit distinct variations, such as differences in the hue or color of the buffalo horn, which is part of its authentic, handcrafted character.

Warranty

Each knife is covered by a lifetime guarantee against obvious manufacturing defects. For example, if the handle comes loose or cracks after a few weeks of proper use, or if the blade develops a crack along the cutting edge or blade spine. These issues are rare, but they can occur. In such cases, we will offer you a replacement with the same product or a refund. As every case is different, it is at our discretion to assess whether our lifetime guarantee against obvious manufacturing defects applies.

After-sales service

Is your knife not cutting as well as you expected? Each knife comes with what we call its "original sharpening." We have over 200 different products in stock, often with multiple copies of each. All our products are handcrafted in Japan before being shipped, and the "original sharpening" may vary. If you think your knife is not cutting to its full potential, please feel free to contact us and we will take care of it by sharpening the knife free of charge!

Oops, did an accident happen to your blade?

Did your knife fall on the floor, get damaged during a slip, or was it used to cut something too hard? We’ll take care of it and support both you and your knife by offering an in-store sharpening and repair service!

Feel free to contact us or stop by the store to get an estimate in just a few minutes!
