At 240 mm, this gyuto follows the standard format of professional kitchens. With a double bevel and a curved profile, the blade suits both rocking and push-cut techniques, and its height keeps the fingers clear of the board. Vegetables, meat and fish all go under the same blade, making it a chef's knife for daily use. Keeping the blade straight at the board protects the edge.
The name gyuto literally means "beef sword". It dates back to the Meiji era, when Western cuisine took hold in Japan and the European chef's knife found its Japanese, double-bevel counterpart. The name is misleading: the blade is not limited to meat and works just as well on vegetables and fish. This model is fitted with a cherry (sakura) handle and a 240 mm blade.
The blade is made of Ginsan (Silver Steel), a stainless steel with a high chromium content. It resists corrosion under normal conditions and does not develop a patina: the surface stays bright over time. On water stones it responds quickly and can be taken to a very fine edge. Regular sharpening on stones maintains that edge, and between sharpenings a few passes on leather realign the edge. This low-maintenance routine keeps the blade ready for everyday tasks.
Care
Hand wash, then dry the blade after use. Do not put it in the dishwasher. No camellia oil is needed for storage.
