This 210 mm gyuto in SKD-11 carries the name "beef sword", given to the Japanese chef's knife that emerged with Western cuisine's influence during the Meiji era. Its curved profile allows both rocking cuts and push cuts on vegetables, meat and fish. At 210 mm, the format is compact and suits smaller kitchens. Keeping the blade straight at the board helps protect the edge.
The blade has a migaki finish, a polished surface worked on stones or with a polisher. The term describes uniform polishing and does not indicate a specific degree of shine. The handle is walnut. On a polished surface, marks, residue and early tarnishing are easy to spot, which makes it simple to monitor the condition of the blade over time.
SLD (SKD Steel) is a semi-stainless tool steel made by Hitachi Metals. It is more corrosion-resistant than pure carbon steel and develops little to no patina. On water stones, it responds to sharpening in a few steady passes, using the same motion as any other steel. Its corrosion resistance is intermediate: it is not fully stainless, and a blade left wet can show marks.
Care
Rinse and dry the blade after each use, and do not leave it in the sink. Never wash it in the dishwasher. Regular edge upkeep keeps it cutting well: a few passes on a leather strop between sharpenings realign the edge.
