Today, there are several major konro (shichirin) production centers, including Mikawayaki, in the city of Hekinan, Aichi Prefecture, Japan. Kameshima Seitojo produces konro in a wide variety of colors and shapes, including rounds and rectangles, and because they are made in the Neri Shichirin, they are made efficiently by kneading and molding the clay.

As a yakitori grill, the Sumibi-Yakitori Konro is purpose-built for the slow, even heat that skewered meats and vegetables require. Its diatomaceous clay walls retain and radiate the near-smokeless heat of binchotan charcoal with exceptional consistency, making it a reliable japanese charcoal bbq grill for both professional cooks and dedicated home enthusiasts who want to bring authentic robatayaki technique to the table.

Frequently Asked Questions

What is the fan provided with this grill used for?

The fan is used to regulate the heat. By fanning it towards the fire, you supply oxygen to the charcoal, which revives the embers and increases the temperature in a few moments. When you stop fanning, the heat gradually subsides. This technique allows you to adjust the cooking on a skewer-by-skewer basis, for example to sear poultry skin at the end of cooking. Used with binchotan, which produces little smoke, the fan becomes the main means of fire control.

What foods to cook on a yakitori grill?

Poultry skewers are the classic choice, from thighs and wings to meatballs. The grill is also suitable for vegetables cut into uniform pieces, such as mushrooms, peppers, or green onions, as well as fish and seafood. The rule of thumb is size: small pieces, threaded tightly together, cook evenly over direct charcoal heat. Larger pieces require a wider barbecue and a longer cooking time.
