Kiritsuke Gyuto is a cross between traditional kiritsuke and gyuto. The profile of the cutting edge is generally straighter and the tip is cut, similar to the kiritsuke, while the double bevel is characteristic of the gyuto. Kiritsuke Gyuto acts as a chef's knife in your kitchen and can do most of the tasks. It is usually found between 210 and 270 mm.

At the age of 35, Go Yoshizawa is a creative craftsman who is making the family business shine. He is the head-chef of the Nigara's forge, one of the most renowned forges in Japan and worldwide, and famous for damascus work. Yoshizawa-san builds on the solid foundation of steelworking that he has developed over the years to discover and explore new processes. Nigara's forge and its craftsmen continue to amaze us with knives that are as beautiful as they are performing.

The famous Anmon Damascus pattern emblematic of the Nigara Forge found on their high-end knives is inspired by the eddies caused by the beautiful Anmon Falls located near Hirosaki City (Aomori Prefecture).

Super Gold 2 or SG2 is a powder metallurgy steel designed by Takefu Special Steel Co Ltd in Takefu, Echizen/ Fukui. It is a high-carbon stainless steel that is pulverized to a very fine grain size and then put back together. This process results in a homogeneous grain structure of the steel, making it easier to sharpen and very durable. Takefu Steel is the company that also created the popular VG-10 steel. The goal behind the design of SG2 was to offer a range above VG-10, which proves to be the case in all aspects.

Being able to reach a hardness of 64 HRC and thus obtaining a breathtaking edge, the SG2 is very famous in the world of Japanese cutlery.

Takefu Special Steel Co Ltd does not manufacture SG2 anymore and the SG2 knives you will see on the market will be, most of the time, almost identical steels manufactured by other companies like Kobelco's R2 which has the same characteristics as Takefu Special Steel Co Ltd's SG2.

Product notes

Please note that each handle is unique and may exhibit distinct variations, such as differences in the hue or color of the buffalo horn, which is part of its authentic, handcrafted character.

Warranty

Each knife is covered by a lifetime guarantee against obvious manufacturing defects. For example, if the handle comes loose or cracks after a few weeks of proper use, or if the blade develops a crack along the cutting edge or blade spine. These issues are rare, but they can occur. In such cases, we will offer you a replacement with the same product or a refund. As every case is different, it is at our discretion to assess whether our lifetime guarantee against obvious manufacturing defects applies.

After-sales service

Is your knife not cutting as well as you expected? Each knife comes with what we call its "original sharpening." We have over 200 different products in stock, often with multiple copies of each. All our products are handcrafted in Japan before being shipped, and the "original sharpening" may vary. If you think your knife is not cutting to its full potential, please feel free to contact us and we will take care of it by sharpening the knife free of charge!

Oops, did an accident happen to your blade?

Did your knife fall on the floor, get damaged during a slip, or was it used to cut something too hard? We’ll take care of it and support both you and your knife by offering an in-store sharpening and repair service!

Feel free to contact us or stop by the store to get an estimate in just a few minutes!

ACCESSORIES RECOMMENDED BY OUR EXPERTS

BLADE MATERIALS

At StaySharpMTL, we exclusively use high-performance materials to manufacture our blades, ensuring durability, sharpness, and precision. Our main range is made of high-carbon stainless steel, chosen for its excellent edge retention and rust resistance, ideal for everyday use in both the kitchen and the workshop. For those seeking a premium look and feel, our Damascus steel combines multiple layers of forged steel to create blades that are not only aesthetically pleasing, but also incredibly strong and flexible. We also offer certain models with a ceramic coating, which provides a smooth and ultra-durable surface to reduce friction and increase wear resistance. Each blade material is selected for its unique performance, thus ensuring an option suited to every user.

BLADE DIMENSIONS

StaySharpMTL blades are available in a range of sizes and profiles to suit different applications. Our most common lengths include 100 mm blades for compact or on-the-go use, 150 mm for general tasks, and 200 mm for more intensive work. In terms of blade width, we offer options such as 20 mm convex edges, ideal for fine tools and razors, and 25 mm flat edges, ideal for chef's knives and utility blades. Blade thickness also varies: from 0.5 mm for extra-fine edges to 1.2 mm for more robust cutting needs, thus giving users the option to choose the blade best suited to their sharpening needs and cutting style.

Intended use

StaySharpMTL blades are designed to meet a variety of needs. Our 150 mm stainless steel blades are ideal for everyday kitchen tasks, offering the perfect balance of sharpness and durability. For on-the-go use, the 100 mm Damascus steel or stainless steel blades are suitable for travel, pocket knives, and outdoor equipment. For heavy-duty or professional work, the 200 mm Damascus steel or ceramic-coated blades offer exceptional strength and edge retention, perfect for woodworking tools and workshop applications.

MAINTENANCE & REPAIR

To keep your blade in perfect condition, rinse and dry it after each use; never leave it damp. For high-carbon steel or Damascus steel blades, apply a thin layer of mineral oil to prevent rust. Ceramic-coated blades should be gently cleaned with soap and a soft cloth. Sharpen them as needed, wipe them down after sharpening, and store them in a dry place in a case or sheath. For Damascus steel, annual oiling and light polishing help preserve its beauty and performance.

Frequently Asked Questions

Where does the Anmon pattern come from?

The Anmon pattern is inspired by the swirling waters of Anmon Falls, located near the city of Hirosaki in Aomori Prefecture. An emblem of the Nigara forge, it can be found on its most elaborately crafted knives. This is a Damascus finish, so it is a visual design: the cut depends on the SG2 steel that forms the edge, not the pattern. To preserve the contrast of these swirls, clean the blade with a soft cloth and avoid all abrasive products.

Why choose a 240 mm Kiritsuke Gyuto?

For large-scale food preparation. The 240 mm blade covers a wide area with every stroke, speeding up the slicing of large quantities or the carving of a large cut of meat. The Kiritsuke profile, with its nearly straight edge, is ideal for push-cutting with prolonged contact with the cutting board, while its fine, sharp, clipped point is suited to precise tasks such as trimming or scoring. Simply ensure you have a large enough cutting board to accommodate the full length of the blade.
