The Kanatoko (鍛冶工房 金床) wrought-iron skillet is handcrafted by Kazuyoshi Akita (秋田 和良) in Fukuyama, Hiroshima Prefecture, Japan. Its iron body features an irregular surface, hammer marks, and variations in texture that are a direct result of the forging process. As a result, each piece may vary slightly in shape, color, and finish.

This skillet measures 445 × 240 × 36 mm and weighs 1,816 g. Made entirely of iron, its sturdy construction is suitable for high-temperature cooking. It is particularly well-suited for searing meats and vegetables, as well as for various dishes that require good heat retention. Its relatively low profile also allows for easy access to food with a spatula.

The cast-iron handle is removable and slots directly into the mount attached to the pan’s body. This design makes storage easier and allows the handle to be separated from the pan when not in use. Since the handle is not mechanically locked in place, it should primarily be used to move the skillet while keeping it horizontal. It is not recommended to shake, tilt sharply, or toss food while holding the skillet solely by the handle.
When in use, the weight of the cast iron provides a stable feel on the cooking surface and promotes more even cooking than a lightweight skillet designed for quick movements. Unseasoned cast iron gradually develops its own patina: the surface naturally darkens and changes with use.

After use, avoid prolonged soaking and dry the pan thoroughly to prevent oxidation. A very thin layer of oil may be applied after cleaning when necessary. As with any uncoated cast iron utensil, a patina and color variations will naturally develop over time.
