Blacksmith Jiro

Jiro-san is a blacksmith and knife maker from the Nagano region. He makes these knives from A to Z alone, meaning that every part of the knife was handcrafted by Jiro-san from start to finish. For those who don't realize the magnitude of his work, the quantity of blades that can be produced by a good quality Japanese industrial manufacturer can reach 10,000 per year. As for Jiro, he has a maximum capacity of about twenty knives per month! This is why the number of knives on the market is limited.

He's been a blacksmith for 20 years, but no one has noticed how incredible his work is. When he was discovered by Hokuto Aizawa (Hitohira's president), it was surprising that no one had found him yet.

Each knife comes with handwritten paper noting the serial number, profile, steel type, handle type, size, and date of manufacture.

Frequently Asked Questions

Why are Jiro knives produced in such small quantities?

Because Jiro-san carries out every step alone, from forging the blade to assembling the handle. This entirely manual process limits his production to about twenty knives a month, while a Japanese industrial manufacturer can produce thousands of blades a year. This scarcity explains why his Santokus are available in limited quantities. Each piece thus bears the work of a single pair of hands. A blacksmith for about twenty years, he also remained largely unknown to the general public for a long time.

What does the number #224 on this Santoku mean?

This is the serial number of this specific piece. Each of Jiro-san's knives comes with a handwritten paper featuring this number, as well as the profile, steel type, handle type, size, and date of manufacture. This document makes it possible to identify the piece and trace its origin. For a Santoku handmade by a single artisan, this traceability clearly distinguishes the piece from a knife produced in series.
