The Hatsukokoro Ginrei Petty Kiritsuke 125 mm is a compact Japanese knife designed for precision tasks. Its kiritsuke profile, recognizable by its angular tip, allows for precise control when making fine cuts, working with small vegetables, preparing fruit, or finishing pieces of meat or fish. This short size offers great maneuverability, particularly appreciated for delicate work that requires precision and agility.

The blade is forged from Ginsan (Ginsanko/Silver 3), a Japanese stainless steel known for its fine grain and ability to achieve a very sharp edge. The sanmai construction combines this Ginsan steel core with softer outer layers of stainless steel, offering a good balance between cutting performance and ease of maintenance. The finish features a subtle contrast between the slightly textured upper area and the polished bevel, where the sanmai line can be seen.

The knife is equipped with an octagonal handle made of stabilized birch wood, enhanced with a clear ring that highlights the transition to the blade. This lightweight, ergonomic handle provides a stable and comfortable grip, while adding a distinctive visual character thanks to the natural patterns of the wood.

When in use, this petty knife stands out for its precise and smooth cutting action. Its thin blade easily penetrates food and allows for highly controlled movements. It excels at detailed work on a cutting board or in the hand, but its size limits its use for large pieces or bulky cuts. It is an ideal complement to longer knives such as a gyuto or santoku.

Thanks to the stainless Ginsan steel, maintenance is simple: hand washing and immediate drying are usually sufficient to preserve the blade. As with any Japanese knife, it is recommended to use a wooden or rubber cutting board and avoid hard surfaces in order to preserve the sharpness.

Guarantee

Every knife carries a lifetime warranty against obvious manufacturing issues. For example, if the handle peels or cracks after a few weeks of proper use. ACCESSORIES RECOMMENDED BY OUR EXPERTS

BLADE MATERIALS

At StaySharpMTL, we use only high-performance materials to craft our blades, ensuring durability, sharpness, and precision. Our core range is made from high-carbon stainless steel, chosen for its excellent edge retention and rust resistance, making it ideal for everyday use in both the kitchen and workshop. For those seeking a premium look and feel, our Damascus steel combines multiple layers of forged steel to create blades that are not only aesthetically pleasing, but also incredibly strong and flexible. We also offer select models with a ceramic finish, which provides a smooth, ultra-durable surface to reduce friction and increase wear resistance. Each blade material is selected for its unique performance, ensuring there's a suitable option for every user.

BLADES DIMENSIONS

StaySharpMTL blades are available in a range of sizes and profiles to suit different applications. Our most common lengths include 100mm blades for compact or on-the-go use, 150mm for general tasks, and 200mm for more intensive work. In terms of blade width, we offer options such as 20mm convex grinds, ideal for fine tools and razors, and 25mm flat grinds, ideal for chef's knives and utility blades. Blade thickness also varies: from 0.5mm for extra-fine edges to 1.2mm for more robust cutting needs, giving users the flexibility to choose the blade best suited to their sharpening needs and cutting style.

INTENDED USE

StaySharpMTL blades are designed to meet a variety of needs. Our 150mm stainless steel blades are ideal for everyday kitchen tasks, offering the perfect balance between sharpness and durability. For on-the-go use, the 100mm Damascus steel or stainless steel blades are suitable for travel, pocket knives, and outdoor gear. For heavy-duty or professional work, the 200mm Damascus steel or ceramic-coated blades offer exceptional strength and edge retention, perfect for woodworking tools and workshop applications.

CARE & MAINTENANCE

To keep your blade in perfect condition, rinse and dry it after each use; never leave it wet. For high-carbon or Damascus steel blades, apply a light coat of mineral oil to prevent rust. Ceramic-coated blades should be cleaned gently with soap and a soft cloth. Sharpen them as needed, wipe them dry after sharpening, and store them in a dry place in a case or scabbard. For Damascus steel, annual oiling and a light polish help maintain its beauty and performance.

Frequently Asked Questions

What Is Ginsan Steel?

Ginsan, also called Silver #3, is a Japanese stainless steel valued for cutting behaviour close to that of high-carbon steels. It takes a fine, keen edge and responds well to sharpening on water stones, yet it resists rust under normal use. That makes it a practical choice for a small knife that gets rinsed often and does not get dried right away every time. A quick wipe after washing remains a good habit to keep the blade looking its finest.

What Is a Kiritsuke Petty Knife Used For?

A kiritsuke petty knife handles the small, precise jobs that a larger knife makes awkward. The angled tip is ideal for scoring, coring and detailed cuts, while the fairly straight edge works well for small push cuts on the board, such as slicing shallots or herbs. At 125 mm, it stays nimble for work in hand, like peeling fruit, which makes it a handy companion to a gyuto or santoku in a busy home kitchen.
