At 240 mm, the gyuto handles the full range of kitchen tasks without compromise: vegetables, meat, and fish. This format is the most common in professional kitchens, where blade length allows single-pass work on large cuts while remaining precise on finer tasks. The curved profile suits both push-cut and rocking techniques, depending on the ingredient and approach.
The sanmai construction places a SG2 (R2) core with stainless steel cladding on each side. This geometry concentrates the hard steel at the edge, where hardness matters, while the cladding absorbs mechanical stress across the rest of the blade. The wa handle in olive wood rounds out the build: the tight grain and warm tones of this Mediterranean wood give it a noticeable density, distinct from the Asian hardwoods more commonly found on this handle style.
SG2 (R2) is a stainless powder steel produced through powder metallurgy. Its high carbon content (~1.45%) and finely distributed vanadium carbides allow it to reach 62,65 HRC, with edge retention that clearly outpaces conventionally forged steels in the same category. On the stone, the vanadium carbides slow material removal: SG2 requires more passes and quality stones to sharpen efficiently. In return, the edge holds well between sharpenings. No patina, no reactivity to acidic foods.
Care
Rinse and dry after each use. Never put in the dishwasher. Sharpening on water stones is recommended to maintain the edge.
