The santoku 165 mm is the standard format for a compact all-purpose knife. Its tall blade profile provides a generous working surface and good knuckle clearance, while the rounded tip naturally favors push cutting over rocking. Vegetables, meat, fish: the three uses the name refers to are reflected directly in the blade geometry, built for board work without a rocking motion.
The tsuchime finish covers the blade face with irregular hammer marks that create small air pockets between the blade and the food, reducing sticking during cuts. The wa-handle in walnut completes the package: the fine grain and warm tone of the wood contrast with the textured blade surface.
Aogami #2 (Blue Steel #2) is produced by Hitachi Metals from Shirogami #2, with chromium and tungsten added for stronger edge retention between sharpenings. It takes a very fine edge on water stones and holds that edge well through regular use. For those who value patina development, Shirogami remains the more reactive option, which has its own appeal. Aogami #2 also develops a progressive patina over time, normal and expected on a non-stainless carbon steel.
Care
Wipe the blade dry immediately after use. Never leave the steel in prolonged contact with moisture or acidic foods. A light coat of camellia oil protects the blade during storage. Dishwasher use is not suitable.
