This 240 mm gyuto from Hatsukokoro pairs an SG2 (R2) powder steel core with a Damascus cladding whose flowing pattern runs the full length of the blade. The curved gyuto profile suits both push-cut and rocking techniques, and the blade height at 52 mm provides comfortable knuckle clearance on the board. Kanji are engraved on the blade, alongside the SG2 designation stamped near the heel.
SG2 (R2), steel produced by Takefu Special Steel through a powder metallurgy process, features a fine and homogeneous distribution of vanadium carbides throughout its matrix. This microstructure delivers edge retention well above that of conventionally forged steels at comparable hardness, with a rated hardness between 62 and 64 HRC. Sharpening requires more passes on the stone than a standard forged steel, and quality stones are recommended to work through the vanadium carbides effectively. Despite its high chromium content, the elevated carbon level means rinsing and drying after each use remains advisable.
