This 240 mm Japanese kiritsuke gyuto knife from the Tetsujin Aogami #2 Metal Flow series, distributed by Hitohira, is designed to offer a precise balance between cutting performance and control. The kiritsuke profile, with its pronounced angular tip, allows for precise work while retaining the versatility of a classic gyuto for everyday kitchen tasks.

The blade is forged using a sanmai construction, with a core of Aogami #2 (Blue Steel #2), renowned for its ability to achieve a fine, durable edge. The sides feature a Metal Flow finish, characterized by subtle lines created during forging and polishing, giving it a sober, technical aesthetic without being decorative.

The Japanese wa handle in ebony, with an octagonal cross-section, offers a stable and neutral grip. Dense and balanced, it contributes to good weight distribution despite its length of 240 mm, promoting fluid work on the cutting board, whether cutting with a pulling or pushing motion.
When used, this Japanese knife stands out for its direct and controlled cutting feel. The Aogami #2 provides a very fine cutting edge, effective on both vegetables and proteins. However, the length and kiritsuke profile require some care when making very short strokes or working in confined spaces: this model is primarily intended for users who are comfortable with long blades.

Like all Japanese carbon steel knives, proper maintenance is required. It is recommended to wipe the blade during and after use to limit oxidation and allow a natural patina to form over time. Regular sharpening on a water stone will preserve the cutting qualities of the Aogami #2.

Please note that each handle is unique and may have distinct variations, such as differences in shades or colors in the buffalo horn, which is part of its authentic and handcrafted character.

Guarantee

Every knife carries a lifetime warranty against obvious manufacturing issues. For example, if the handle peels or cracks after a few weeks of proper use. Or if the blade develops a crack from the edge to the spine. These issues are rare, but can occur. In such cases, you will be offered an exchange for the same product or a refund. Since each case is different, it is at our discretion to assess whether our lifetime warranty against obvious manufacturing issues applies.
