This Takeda NAS Chinese Cleaver (Small) Japanese knife is hand-forged by Shosui Takeda in Niimi, Okayama Prefecture. It is part of the NAS (New Aogami Super) series, renowned for its exceptional sharpness and durability. The blade consists of an Aogami Super (Blue Super Steel) core laminated in a stainless steel casing. This san-mai construction combines the performance of carbon steel at the core with the ease of maintenance of stainless steel on the outside.
The rectangular profile of the Chinese cleaver provides a large cutting surface, ideal for slicing, chopping, or transferring ingredients. Despite its compact size, this “Small” model retains the balance and lightness characteristic of Takeda blades. Its raw kurouchi finish protects the blade from oxidation while giving it a distinctive rustic look.
The octagonal handle made of dark maple wood, combined with a dark wood ferrule, provides a comfortable grip and precise control, even during long cutting sessions. As each piece is unique, slight variations in texture and color are normal.
When cutting, this knife provides a smooth and lively feel, with excellent edge retention thanks to the Aogami Super steel. It excels at preparing vegetables, herbs, and boneless meats, but is not designed for bones or hard foods. Sharpening with a water stone is recommended to maintain its performance.
Like any carbon steel blade, the Aogami Super core will develop a natural patina over time. It is advisable to wipe the blade after use and keep it dry to prevent corrosion.
