This Hitohira Tanaka Kyuzo Aogami #1 Migaki Kiritsuke Gyuto 195 mm Japanese knife combines tradition and precision craftsmanship. Produced by masters Tanaka and Kyuzo, it features an Aogami #1 (Blue #1) steel blade, a carbon steel renowned for its hardness and ability to retain an extremely fine edge. The blade is sanmai construction, with a carbon steel core wrapped in mild steel for added resilience.


Its migaki finish highlights the blade's polish, symbolizing meticulous forging work. The kiritsuke tip—angular and elegant—offers excellent precision for fine cuts and delicate trimming.
The handle is made of ziricote, a dense tropical wood with rich grain, giving the knife a balanced grip and a high-end look.

Have it sharpened on a water stone by a professional every year. Store in a dry place. Wash immediately after use and dry completely before storing. Do not let soak. Not dishwasher safe.

CARE & MAINTENANCE

To keep your blade in perfect condition, rinse and dry it after each use; never leave it wet. For high-carbon or Damascus steel blades, apply a light coat of mineral oil to prevent rust. Ceramic-coated blades should be cleaned gently with soap and a soft cloth. Sharpen them as needed, wipe them dry after sharpening, and store them in a dry place in a case or scabbard. For Damascus steel, annual oiling and a light polish help maintain its beauty and performance.
