This 210 mm kiritsuke gyuto knife belongs to Hitohira's Imojiya TH Stainless series. This range uses monosteel stainless steel (TH Stainless), which is valued for its ease of maintenance and long-term stability. The blade has a uniform satin finish and a slightly pointed kiritsuke profile, designed to offer both precision and versatility in the kitchen.

The knife is equipped with a wa handle made of ebony, with a dark and uniform polish. This dense wood provides good inertia in the hand and a high-end feel, while ensuring excellent durability. The junction with the blade is clean and unadorned, highlighting the sleek style characteristic of Imojiya lines.

Maintenance tips

Have it sharpened on a water stone by a professional every year. Store in a dry place. Wash immediately after use and dry completely before storing. Do not let soak. Not dishwasher safe.

CARE & MAINTENANCE

To keep your blade in perfect condition, rinse and dry it after each use; never leave it wet. For high-carbon or Damascus steel blades, apply a light coat of mineral oil to prevent rust. Ceramic-coated blades should be cleaned gently with soap and a soft cloth. Sharpen them as needed, wipe them dry after sharpening, and store them in a dry place in a case or scabbard. For Damascus steel, annual oiling and a light polish help maintain its beauty and performance.
