Hitohira No.02 Whetstone #1000 – Medium Grit Stone

Type: Medium grit whetstone (grit #1000)
Dimensions: 205 × 75 × 25 mm
Abrasive: Aluminum oxide + zirconia
Colour: Yellowish-brown
Application: General kitchen knives – all steel types

The #1000 stone is one of the most frequently used grits in sharpening. Positioned between rough grinding and finishing, it removes scratches from coarse stones and begins shaping a fine edge.

The porous structure combined with a mixed abrasive (alumina and zirconium) ensures excellent sharpening efficiency, even on harder steels. Thanks to its manufacturing method, it offers exceptional longevity and remarkable resistance to environmental conditions (humidity, heat, temperature variations).

This grit typically represents 60–70% of the sharpening effort when aiming for a keen, long-lasting edge.

Suitable for all types of kitchen knives, whether stainless or carbon steel.

Produced in Japan, Kyoto.

Stay Sharp Tip:
This is our go-to stone for regular maintenance. If paired with a #3000, it provides the perfect balance for keeping your blades razor-sharp at home. Mastering this stone is key for anyone serious about sharpening.

Product notes

Please note that each handle is unique and may have distinct variations, such as differences in shades or colors in the buffalo horn, which is part of its authentic and handcrafted character.

Guarantee

Every knife carries a lifetime warranty against obvious manufacturing issues. For example, if the handle peels or cracks after a few weeks of proper use. Or if the blade develops a crack from the edge to the spine. These issues are rare, but can occur. In such cases, you will be offered an exchange for the same product or a refund. Since each case is different, it is at our discretion to assess whether our lifetime warranty against obvious manufacturing issues applies.
