The Makoto Kurosaki VG7 Damascus Petty 135 mm is a Japanese petty knife (utility tool) from Makoto Kurosaki's VG7 Damascus series. The blade, approximately 135 mm long, is made of VG7 steel, with a hardened core (~62 HRC) wrapped in stainless damask outer layers (san-mai construction), with a polished finish (“migaki” / “polished”) and a visible damask pattern. The octagonal Wa-style handle is made of ebony, providing grip and balance.
This knife is mainly used for precise cutting: fruit, vegetables, light filleting, peeling, and detailed work requiring finesse and control. This knife also allows for quick cuts thanks to its thin blade and sharp edge.
In terms of cutting experience, it feels very light and easy to handle, ideal for precise movements. The VG7 blade offers good edge retention, allowing for clean cuts with little pressure. However, this type of blade is not designed for heavy use (cutting bones, very hard products): the cutting edge could be damaged if subjected to excessive stress.
Recommended care: rinse well with warm water after use, especially if the knife comes into contact with acidic foods, and wipe immediately to prevent stains or corrosion. Sharpen periodically with a suitable water stone (medium to fine grain) and use a sharpening steel or leather strop to maintain the edge. Do not soak or wash in the dishwasher.
