This Hitohira TD Aogami #2 Nashiji 240 mm sujihiki is a Japanese knife designed for precision cutting, particularly for long, even slices of meat, fish, or poultry. The TD series features a thin blade, a slender profile, and a nashiji finish with visible hammer marks, giving the knife a distinctive handcrafted look.
The blade is constructed in san-mai, with an Aogami #2 (carbon steel) core covered with a stainless steel coating. This combination offers an excellent compromise: the cutting performance and responsiveness of carbon, while reducing maintenance thanks to the stainless steel sides. The core will gradually develop a natural patina. The 240 mm length allows for long, clean cuts, suitable for medium to large pieces.
The walnut handle with a light hardwood ferrule provides a light and balanced grip typical of wa handles. The blade geometry is straight and thin, with a sharp point reminiscent of kiritsuke profiles. The cutting edge is long, continuous, and optimized for slicing movements.
When in use, this sujihiki offers a clean, smooth, and precise cutting experience. The thin blade easily penetrates fibers and minimizes resistance. It excels at cutting sashimi, portioning cooked or raw meat, and any long cuts that require cleanliness and consistency. Like any knife with a fine geometry, it is not designed for heavy-duty tasks or very dense foods with bones.
Care: The Aogami #2 core must be wiped immediately after use to prevent oxidation. Complete drying and storage away from moisture are recommended. Sharpening is simple and responsive on water stones, with the carbon steel offering a crisp and pleasant feel when sharpening.
