The blade is constructed in sanmai, with a VG10 stainless steel core wrapped in damask layers with a Hyokyo finish. The Damascus pattern is deliberately understated and fine, highlighting the forging work without excessive decoration. The long, progressive profile of this 240 mm gyuto offers excellent versatility, both for cutting vegetables and for working with meat or fish, while maintaining a precise and usable tip.
The grind by Rou provides an efficient and consistent geometry along the entire length of the blade.
