The Benriner Turning Slicer is a Japanese tool designed to transform vegetables into regular, thin or thick strands using a simple and precise manual mechanism. Manufactured in Japan, this model is designed for long-lasting use: sturdy rigid resin structure, stable crank handle and effective drive discs to hold the vegetables in place.
The system is based on a fixed central blade accompanied by interchangeable blades (fine, medium, coarse). By turning the crank, the vegetable moves forward against the blade, producing vegetable spirals or “noodles” that are ideal for garnishes, salads, side dishes, or preparing sudachi-daikon, daikon tsuma, or other traditional condiments.
In use, the cut is even, clean, and intuitive. The Turning Slicer allows for quick work when preparing large volumes or long garnishes. The mechanical tolerance is deliberately simple: perfect for cylindrical or slightly conical vegetables, but less suitable for pieces that are too small or very irregular.
Maintenance is minimal: rinse immediately after use, remove the blades if necessary, then dry thoroughly. As with all non-stainless Japanese blades found on certain models, it is recommended that you wipe them dry immediately to prevent discoloration or oxidation. The resin frame can be easily cleaned with soapy water.
