The Hitohira Futana SLD Nashiji Gyuto 210mm, Futana series, is made with an SLD steel core wrapped in a sanmai construction. SLD steel is a semi-stainless steel that offers good corrosion resistance while maintaining high hardness, allowing for a durable cutting edge that is relatively easy to maintain. The blade features a nashiji finish typical of the series, combined with a light satin finish on the bottom of the blade, for a raw and functional look.
With a length of 210 mm, this gyuto covers all everyday tasks: vegetables, proteins, herbs, fruits, precise or more generous preparations. Its slightly curved profile allows for comfortable rocking cuts, while the thinness towards the tip improves precision in detailed work.

Cutting experience
This gyuto knife is finely sharpened out of the box, with a balanced geometry that ensures smooth penetration into food. SLD maintains its edge well, even with regular use. It is not as rust-resistant as completely stainless steel: a slight patina may develop over time, without the constraints of pure carbon steel. The blade remains sturdy enough for everyday use, but like any Japanese knife, it is not designed for bones, very hard foods, or twisting.
