This compact paring knife is a traditional Japanese utility tool, ideal for precise cutting tasks. Hand-forged in Tosa, it features a rustic Kurouchi finish and a razor-sharp edge that highlights the high-performance Shirogami #2 (White #2) steel core.
The 80mm blade is thin, responsive, and incredibly sharp — perfect for peeling, trimming, or slicing small ingredients with speed and accuracy. White #2 carbon steel is known for its excellent edge retention and ease of sharpening, making it a favorite among experienced cooks. It does, however, require basic care to prevent rust (wipe and dry after use).
The handle is made of lightweight Ho wood (Japanese magnolia) with a dark resin ferrule, providing a comfortable and balanced grip for detailed work.
