Le Santoku

Le Santoku

Le Santoku, dont le nom signifie "trois vertus" ou "trois utilisations", tire son nom de sa polyvalence. Il a été développé au Japon au 20e siècle comme une réponse à la popularité croissante des couteaux de chef occidentaux. Conçu pour répondre aux besoins des cuisiniers japonais tout en adoptant des éléments de la cuisine occidentale, le Santoku est rapidement devenu un incontournable dans les cuisines du monde entier.

Le Santoku se caractérise par une lame large et rectangulaire finissant en pointe « Kamagata » comparable à la forme d’un bec d’oiseau. Généralement de 15 à 18 cm de longueur la lame à deux biseaux est parfaitement adaptée à une multitude de tâches en cuisine. La pointe de la lame est légèrement courbée, permettant des mouvements de balancier fluides lors de la coupe, et la largeur de la lame facilite la collecte des aliments coupés.

Polyvalence en Cuisine Le Santoku excelle dans la préparation de viandes, de poissons, de légumes et même de fruits. Il est idéal pour hacher, trancher, émincer et découper finement. Sa polyvalence en fait l'outil préféré des chefs amateurs et professionnels du monde entier.

Le Bunka

Le Bunka

En terme de couteau tout usage, ce type de lame japonaise est polyvalente et trouve ses racines dans la tradition. Contrairement au Santoku, le Bunka est plus récent et moins connu en dehors du Japon, mais il gagne rapidement en popularité grâce à ses capacités exceptionnelles en cuisine.

Le Bunka se distingue par sa lame élégante, pointue et légèrement incurvée. La taille de la lame varie généralement entre 150 mm et 180 mm, ce qui en fait un couteau aussi maniable que le Santoku.

Le Bunka est un véritable couteau tout-usage japonais. Sa forme permet une grande précision, ce qui le rend idéal pour découper des légumes fins, des herbes, ainsi que pour de légères tâches de boucheries de viande ou de préparation de sushis. La pointe de la lame est également utile pour effectuer des coupes minutieuses et artistiques.
