Yoshikane Hamono is located in Sanjo, Niigata and founded in 1919. It is led by Kazuomi San who continues to excel and evolve in the manufacture of high quality kitchen knives. This series is forged in Shirogmi no.2 steel and coated with stainless steel. The technique used to polish and afiner the Jigane (Soft Steel) on this blade is exceptional. It will allow the blade a very good ability to hold its edge. This steel is also easier to sharpen and is a great choice to start your front with Japanese knives!
