Ashi Hamono has been making incredibly powerful knives in Sakai since 1948. Their knives are known for their finesse and superb geometry. These blades have a slight convexity making the cut very pleasant. Quality control is very important for Ashi. They make their blades, handles, let’s say everything in-house.
Ashi designs his knives using a single piece of steel (rather than a 2/3 layer laminated blade), called a Zenkou construction. The Shirogami line This line is renowned for its finesse and precision, using high-quality carbon steels and stainless steels.
