These Hitachi carbon core knives covered with soft iron are forged by blacksmith “Tetsu”, a friend and partner of the sharpener Myojin; their workshops are next to each other. The resulting blade in aogami #2 has an HRC of 63-64, but with a very different feel than blacksmith Yoshikazu Tanaka of the same steel. A little softer, a little more resistant to breaks and faster to sharpen on stones, but still with excellent cutting retention!
