Suehiro Usukuchi is an exceptional clear soy sauce. Produced during the heat of summer, it will be brewed for two and a half months, compared to eight months if brewed in winter. From this delicate work, inspired by the seasons, comes a sauce with a clear color, balanced but complex flavors. It will perfectly season soups, sauces, simmered dishes as well as vegetable stir-fries.

Suehiro Shoyu Brewery is located in southwestern Japan, near the Ibogawa River, in the heart of Tatsuno City in Hyogo Prefecture. Founded in 1879, the brewery still retains its artisanal brewing methods today. But this traditional know-how is not without its challenges in the face of food industrialization – of the sixty or so soybean breweries once established in the city of Tatsuno, only a handful remain. Unlike other brewers who work with wooden barrels, Suehiro Shoyu Brewery produces Usukuchi in small quantities in fiberglass tanks. The secret to this unique flavor comes from Suehiro’s wooden warehouse, where fermentation-specific bacteria naturally reside.
