The Hitohira Imojiya TH Inox Honesuki Kaku 150 mm Japanese knife is a precision tool designed for poultry and cuts requiring control and robustness. This model is part of the Imojiya TH Inox series, renowned for its meticulous craftsmanship and excellent balance between cutting precision and durability.

The 150 mm blade is forged from Japanese stainless steel, a corrosion-resistant and easy-to-maintain material, ideal for everyday use in professional or domestic kitchens. Its Honesuki Kaku profile—with an angular tip and pronounced heel—is specially designed for deboning, separating joints, and working close to the bone without compromising the sharpness of the edge.

The octagonal ebony wood handle provides a simple and elegant aesthetic, while offering a firm and balanced grip. Its natural density contributes to a feeling of solidity and good control, even during prolonged use.

In the hand, this knife feels rigid and precise. The fine cutting edge allows for clean penetration into flesh, while the robust geometry of the blade provides the confidence needed for more demanding tasks. Less versatile than a gyuto, the Honesuki excels at technical cuts and poultry preparation.

Thanks to its stainless steel composition, it does not require the same precautions as carbon steel: simply wiping it down after use is enough to preserve the blade. Regular sharpening with a fine-grained stone will maintain its optimal sharpness.

Since each case is different, it is at our discretion to assess whether our lifetime warranty against obvious manufacturing issues applies.

ACCESSORIES RECOMMENDED BY OUR EXPERTS

INTRODUCTION TO THE HONESUKI KNIFE

The Honesuki, which translates to "bone lover," is a Japanese specialty knife originally designed for preparing poultry but also effective for preparing small fish. Its triangular blade, ranging in length from 150 to 180 mm, features a sharp point and a slightly curved back. This specific shape facilitates the precise separation of bones from flesh, whether for poultry or small fish.

ASYMMETRICAL CUTTING EDGE AND PRECISION

The unique feature of the Honesuki blade is its asymmetrical edge, generally sharper on one side (70/30), allowing for clean and precise cuts. This knife combines functionality and aesthetics, reflecting the expertise of traditional Japanese craftsmanship.

USERS AND APPLICATIONS

It is ideal for chefs specializing in Japanese cuisine and is ideal for those seeking precision in preparing poultry or small fish dishes. Its ability to make fine, controlled cuts makes it a valuable tool in professional kitchens and for passionate amateurs.

AMBIDEXTROUS VARIANT

Nowadays, we also find Honesuki that have a symmetrical 50/50 or "ambidextrous" blade. Easier to tame, the ambidextrous Honesuki is however a little less effective in the hands of an experienced cook.
